Mango Salsa

Today’s recipe is for Mango Salsa; a great side dish with just the right juxtaposition of cool and spicy. Let’s take a look at what you’ll need:

Red onion, poblano pepper, red pepper, green onions, mangoes, limes, cilantro and crushed red pepper.

Julienne (1) red pepper and then (1) poblano pepper and put in large bowl.

Slice (1) red onion and add to peppers.

Cut (6) green onions into thin pieces as shown.

Peel and slice into pieces (3) mangoes.

Chop and add about ¼ cup cilantro to mixture.

Squeeze the juice of (2) limes on top of mixture.

Sprinkle 1 – 2 teaspoons of crushed red pepper in bowl.

Mix thoroughly.

Enjoy as a side with whatever you choose. We had it with grilled raspberry chipotle chicken breast.

Don’t forget the Give-Away next week.

You do a really good job finding different types of recipes. Looks really good. I am afraid of cutting mangoes though. They are so slippery I am always afraid to cut myself.

So when are you opening your cafe? Every time I come here I leave feeling hungry. You cook the kinds of things I like to eat. The mangoes are just about to come into season in Oz and I can't wait. I will definitely try this salad.
